Job Summary
A part-time research assistant position is available in the Food Science Department at The Pennsylvania State University (University Park campus) as part of an externally funded research project.
The primary objective of this project is to demonstrate that modulation of the fermentable sugar profile through targeted enzyme addition during the mashing step can enable the production of non‑alcoholic and low‑alcohol beer (NABLAB) with reduced residual sugars and enhanced utilization of alternative carbon pathways.
A secondary objective is to evaluate the impact of different dry‑hopping regimes on the physicochemical properties and flavor‑related characteristics of selected NABLAB formulations.
