Manage the laboratory, including organization, hygiene, stocks, and equipment maintenance, as well as managing the reserve of raw materials, consumables, and equipment.
Participate actively in the organization and smooth running of internships, courses, and masterclasses, while also mentoring apprentices.
Contribute to recipe updates, ensure food safety and HACCP compliance, and welcome visitors, with regular travel within France and occasional international trips.
